Apple Pie
This Pie I have made several times, the first on 30 Jan 1995. It was named the "Platypus Pie" not because of its content though. The official title is "Ten Minute Apple Pie" however that is the supposive cooking time. I find it takes about 20min or more to cook, and a bit over an hour to do the whole thing. Adding a pear or 2 makes it even more delicious.

3724 TEN MINUTE APPLE PIE:
| 425 g can pie apple 2 tablespoons sugar |
1/4 cup water grated lemon rind |
Pastry
| 90 g (3 oz) butter 1/4 cup sugar 1 egg beaten |
3/4 cup flour 3/4 cup S.R. flour castor sugar |
Place apples, sugar and water in a saucepan and heat gently, stirring until
sugar is dissolved. Add lemon rind. In another saucepan melt butter and add
sugar. Remove from heat and stir in egg. Beat briskly. Add fours and stir until
dough leaves sides of saucepan (if the egg is large, a little more flour may
be required). Roll out two-thirds of the dough while hot between 2 sheeps of
greaseproof paper to line a 20 cd (8") pie plate; or pat out by hand and
press into pie plate. Roll out remaining one-rhird for top. Reheat apple mixture
until boiling and pour into pie crust. Cover with pastry top, make steam vents
and crimp edges. Sprinkle with castor sugar and bake at 220oC (425oF) for 10
mins.
Variation:
Substitute pie apricots or peaches for apples
