Method:
Separate eggs into egg whites and egg yolks. Avoid any egg yolk getting into the egg whites.
Whisk the egg whites until they are light and fluffy.
Melt the butter, and allow it to cool for several minutes.
Mix the flour, cooled melted butter, egg yolks, milk and sugar together.
Add the salt and egg whites to mixture and mix in well.
Cooking:
Prepare the waffle maker by lightly oiling the waffle plates.
Switch on power, the red indicator light should come on to indicate the waffle maker is warming.
When the green indicator light goes off, the waffle maker is hot enough to start.
Pour on the mixture, ensuring that the mixture just covers the waffle plate (as they will rise). The green indicator light will go on and off during the cycle.
Cook till golden-brown, which will take about 7 to 8 minutes.
When cooked, remove with a wooden or plastic spatula. Do not use any metal implements on the waffle maker, as it will damage the non-stick surface.
Repeat steps 3 to 6 for each pair of waffles.
Once finished, unplug the waffle maker and allow it to cool, then clean it with a soft warm soapy towel and dry.
